6 thick slices of Fraternité Pain Rustique
1 pinch salt
1 punnet of raspberries
1 punnet of blueberries
250ml vanilla bean ice cream
Icing sugar for dusting
Agave nectar or honey for drizzling
1 In a bowl large enough to fit the slices of bread, whisk the eggs, cream and salt together.
2 Heat a large non-stick pan over a med-high heat and add some of the butter. Allow to foam, but not burn.
3 Dip one piece of bread into the egg mix, enough to soak a little, but not so much that the bread falls apart. Fry until golden on both sides.
4 Repeat for each slice, discarding the old butter and adding new butter each time.
Cut the French toast on an angle, arrange on a plate, then top with berries and cherries, a scoop of ice cream, dust with icing sugar and drizzle with agave nectar or honey. Enjoy!
